Leftover Beef Chilli Tortilla Bake — finished dish

Ingredients

  • 120g saved enchilada filling
  • Leftover loaded-fries chilli, up to 120g, if you have any
  • 3–4 tortilla wraps, cut into strips
  • 40g passata or chopped tomatoes, if mixture needs loosening
  • 19g cheddar, grated
  • ½ tomato, diced
  • 1½ tbsp plain yoghurt, optional

Method

  1. Heat oven to 200°C / 180°C fan.
  2. Reheat the leftover chilli/filling in a pan until steaming hot. Add passata if dry.
  3. Remove babies portion and mash well.
  4. Layer tortilla strips and chilli filling in a small baking dish.
  5. Sprinkle with cheddar.
  6. Bake for 12–15 minutes until hot and bubbling.
  7. Serve with diced tomato and yoghurt.

Storage and reheating

Cool leftovers quickly and refrigerate within 2 hours. Use within 48 hours or freeze. Reheat cooked meat, beans and sauces until steaming hot throughout, and only reheat once. For babies, remove portions before adding salty cheese, chilli paste, chilli sauce, ketchup, salsa or adult sauces. Squash beans and peas, break mince up finely, and keep potato and tortilla textures soft.
