Ingredients

  • 130g chickpeas, drained and rinsed, for this meal
  • 45g extra chickpeas for Dinner 3
  • 35g feta, crumbled
  • 20g spring onion, finely sliced
  • ½ cucumber, diced
  • 6g fresh mint and basil, chopped
  • 1 tsp olive or rapeseed oil
  • ¼ lemon, juiced
  • ¼ tsp sumac
  • ¼ tsp ground cumin
  • pinch of ground cinnamon
  • 30g plain yoghurt, optional

Method

  1. Rinse and drain the chickpeas well.
  2. Set aside the planned extra chickpeas for Dinner 3 before adding feta, honey, pomegranate or adult seasoning.
  3. Mix chickpeas, spring onion, cucumber, herbs, lemon juice, oil, sumac, cumin and cinnamon in a bowl.
  4. Remove baby and toddler portions of plain seasoned chickpeas and cucumber before adding feta, yoghurt dressing or adult toppings.
  5. Squash or mash chickpeas for babies and toddlers as needed.
  6. Stir through yoghurt if using for older children and adults.
  7. Crumble feta over adult and older-child portions.
  8. Adults can add pomegranate seeds, honey drizzle, chilli, black pepper or salt at the table.
  9. Refrigerate the saved plain chickpeas for Dinner 3 within 2 hours.

Storage and reheating

Cool cooked sweet potato, quesadilla filling and pasta within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat cooked components until steaming hot throughout and only reheat once. Chickpea salad is best eaten fresh; save plain chickpeas for Dinner 3 before adding feta, honey, pomegranate or adult seasoning. For babies and toddlers, keep portions separate before adding salt, chilli, honey, whole pomegranate seeds, large amounts of feta or parmesan, or adult dressings.

Safety and substitutions

Whole chickpeas can be a choking risk for babies and toddlers, so squash or mash them well. Pomegranate seeds are not suitable for babies because of choking risk — keep them for adults and older children only. Feta is salty, so keep baby portions free from cheese or use tiny amounts only if already tolerated. Cool and refrigerate saved chickpeas within 2 hours and use in Dinner 3 within 48 hours.
