Ingredients
- 70g puff pastry
- 110g sweet potato, peeled and diced, for this meal
- 90g extra sweet potato for Dinner 3
- 45g feta, crumbled
- 2g fresh sage, chopped
- 1 tsp olive or rapeseed oil
Method
- Heat oven to 200°C / 180°C fan.
- Toss all sweet potato with oil and sage. Roast for 25–30 minutes until very soft and golden.
- Save the planned extra roasted sweet potato for Dinner 3 before adding honey, extra feta or adult seasoning.
- Place puff pastry on a baking tray and score a border around the edge.
- Remove baby and toddler portions of soft roasted sweet potato before adding salty feta to the tart topping.
- Top pastry with roasted sweet potato and feta.
- Bake for 15–18 minutes until pastry is golden and cooked through.
- Adults can drizzle honey and add black pepper at the table.
- Refrigerate saved sweet potato for Dinner 3 within 2 hours.
Storage and reheating
Cool roasted sweet potato, tart and cooked rice within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat tart, aubergine and rice until steaming hot throughout and only reheat once. Greek bowls are best fresh; keep cucumber and yoghurt separate until serving where possible. Save plain roasted sweet potato for Dinner 3 before adding honey, salty feta or adult seasoning. For babies and toddlers, keep portions separate before adding salt, chilli, honey, peanut butter, whole pomegranate seeds, large amounts of feta or adult toppings.
Safety and substitutions
Pastry can be crisp and difficult for toddlers, so serve soft sweet potato separately if needed. Sweet potato must be very soft for babies. Feta and pastry add salt, so keep baby portions plain. Cool leftovers within 2 hours and refrigerate saved sweet potato for Dinner 3 within 48 hours.
