Ingredients

  • 70g halloumi
  • 65g dried bulgur, wheatberries, couscous or mixed grains
  • 60g cooked lentils
  • 45g extra grains and lentils for Dinner 3, cooked equivalent
  • ¼ courgette, thickly sliced
  • ½ pepper, chunks
  • 60g extra grilled veg for Dinner 3
  • 120g watermelon, diced
  • ¼ cucumber, diced
  • ½ tomato, diced or quartered
  • 25g olives, adults and older children only
  • 50g plain full-fat yoghurt
  • 3g fresh mint
  • 3g fresh parsley
  • 5ml olive or rapeseed oil
  • ¼ garlic clove
  • 20g pomegranate seeds, optional

Method

  1. Cook the grains according to the packet. Stir cooked lentils through the grains. Keep this base unsalted.
  2. Remove baby portions and the extra plain grain-lentil base for Dinner 3 before adding olives, halloumi or adult seasoning.
  3. Thread halloumi, courgette and pepper onto skewers, or cook them loose on a BBQ or griddle pan. Brush lightly with oil and garlic.
  4. Grill for 2–3 minutes per side until the halloumi is golden and the vegetables are softened.
  5. Save the planned extra grilled veg for Dinner 3.
  6. Mix the remaining grain-lentil base with cucumber, tomatoes, watermelon, mint, parsley and pomegranate if using.
  7. Add olives to adult and older-child portions only.
  8. Serve with grilled halloumi skewers and yoghurt.

Storage and reheating

Cool leftovers within 2 hours. Refrigerate cooked grain-lentil bases and cooked vegetables for up to 48 hours. Reheat leftovers until steaming hot throughout and only once. Keep watermelon, fresh cucumber and herb salad separate from cooked leftovers. Freeze plain cooked grain-lentil filling if not using within 48 hours. For babies, keep halloumi, olives, chilli, salty cheese and added salt out of their portions.

Safety and substitutions

Halloumi and olives are salty, so keep them out of baby portions. Slice olives for children and avoid them for babies. Use seedless watermelon cut into safe pieces. Cool the saved grain and veg base within 2 hours and use for Dinner 3 within 48 hours.
