Greek-Style Chicken Pasta Salad — finished dish

Ingredients

  • 190g chicken thighs, drumsticks or chicken breast
  • 1 tbsp olive or rapeseed oil
  • 1 tsp dried oregano or Greek-style seasoning, low-salt if possible
  • 90g dried fusilli or penne
  • 1 tomato, quartered or diced
  • ¼ cucumber, chopped
  • 1 small red onion, finely diced
  • 25g Greek-style salad cheese or feta, cubed
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Juice of ½ lemon, optional
  • 40g plain yoghurt, optional, for a creamier child-friendly dressing

Method

  1. Heat oven to 220°C / 200°C fan. Rub chicken with oil and oregano. Do not add salt.
  2. Roast for 30–35 minutes until fully cooked, with no pink meat. Cool slightly, then shred.
  3. Cook the pasta according to the packet. Cook babies's portion a little softer.
  4. Remove a baby portion of plain pasta and shredded chicken before dressing.
  5. Mix the tomatoes, cucumber, red onion, Greek-style cheese, olive oil and balsamic vinegar.
  6. Toss with the pasta and shredded chicken.
  7. Save about 150g cooked chicken and 100–150g cooked pasta for Dinner 3.

Storage and reheating

Cool leftovers quickly and refrigerate within 2 hours. Use within 48 hours or freeze. Reheat cooked meat, beans and sauces until steaming hot throughout, and only reheat once. For babies, remove portions before adding salty cheese, ketchup, fajita seasoning, stock cubes or adult sauces. Squash beans and peas, finely shred chicken, break mince up well, and keep pasta/wrap textures soft and manageable.

Safety and substitutions

Tomatoes should be quartered for the toddler and chopped very small or softened for babies. Raw onion is not ideal for babies. Feta-style cheese is salty, so keep it out of babies portion.
