Ingredients
- 130g chickpeas, drained and rinsed
- ½ cucumber, diced
- 35g feta, crumbled
- 4g fresh basil, chopped
- 15g spring onion, finely sliced
- 45g plain yoghurt
- ¼ lemon, juiced
- 1 tsp olive or rapeseed oil
Method
- Rinse and drain the chickpeas.
- Mix chickpeas, cucumber, spring onion, basil, lemon juice and oil in a bowl.
- Remove baby and toddler portions of plain chickpeas and cucumber before adding feta, pomegranate or adult seasoning.
- Squash or mash chickpeas for babies and toddlers as needed.
- Stir through yoghurt for older children and adults.
- Crumble feta over adult and older-child portions.
- Adults can add pomegranate seeds, black pepper, chilli or salt at the table.
Storage and reheating
Cool roasted sweet potato, tart and cooked rice within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat tart, aubergine and rice until steaming hot throughout and only reheat once. Greek bowls are best fresh; keep cucumber and yoghurt separate until serving where possible. Save plain roasted sweet potato for Dinner 3 before adding honey, salty feta or adult seasoning. For babies and toddlers, keep portions separate before adding salt, chilli, honey, peanut butter, whole pomegranate seeds, large amounts of feta or adult toppings.
Safety and substitutions
Whole chickpeas and pomegranate seeds can be choking hazards for young children, so squash chickpeas and keep pomegranate for adults and older children only. Feta is salty, so keep baby portions cheese-free. Bowls are best eaten fresh; refrigerate within 2 hours if not serving immediately.
