Ingredients
- 160g sweet potato, peeled and diced
- 65g bulgur wheat or couscous, dried
- 35g feta, crumbled
- ½ cucumber, diced
- 15g spring onion, finely sliced
- 25g saved yoghurt-herb sauce from Dinner 1
- 25g extra plain yoghurt
- 4g mixed fresh herbs, chopped
- ¼ lemon, juiced
- 1 tsp olive or rapeseed oil
Method
- Heat oven to 200°C / 180°C fan.
- Toss sweet potato with oil and roast for 20–25 minutes until very soft.
- Cook bulgur or couscous according to packet instructions until tender. Fluff with a fork and keep moist for younger children.
- Remove baby and toddler portions of soft sweet potato and bulgur before adding feta or adult seasoning.
- Mix saved yoghurt-herb sauce from Dinner 1 with extra yoghurt, lemon juice and herbs.
- Combine sweet potato, bulgur, cucumber and spring onion in bowls.
- Spoon yoghurt-herb dressing over the top.
- Crumble feta over adult and older-child portions.
- Adults can add black pepper, chilli or salt at the table.
Storage and reheating
Cool roasted aubergine, sweet potato and pasta within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat cooked components until steaming hot throughout and only reheat once. Save extra yoghurt-herb sauce from Dinner 1 for Dinner 3 before adding pistachios, parmesan or adult seasoning. Flatbreads are best served fresh. For babies and toddlers, keep portions separate before adding salt, chilli, whole nuts, pistachios, pomegranate seeds, large amounts of feta or parmesan, or adult toppings.
Safety and substitutions
Use saved yoghurt-herb sauce only if it was cooled quickly and stored safely. Bulgur and couscous contain wheat/gluten. Sweet potato must be very soft for babies. Feta is salty, so keep baby portions cheese-free. Cucumber should be peeled and diced very small or omitted for babies. Cool leftovers within 2 hours and eat within 48 hours.
