Ingredients

  • 90g saved sweet potato from Dinner 1
  • 150g aubergine, diced
  • 75g rice
  • 45g plain yoghurt
  • 15g spring onion, finely sliced
  • ½ garlic clove, crushed
  • ¾ tsp mild curry powder
  • ¼ tsp ground cumin
  • 5g tomato purée
  • 1 tsp olive or rapeseed oil

Method

  1. Cook rice according to packet instructions. Keep it moist for younger children.
  2. Heat oil in a pan. Cook aubergine with garlic for 8–10 minutes until very soft.
  3. Stir in curry powder, cumin and tomato purée. Cook for 1 minute.
  4. Add saved sweet potato from Dinner 1 and a splash of water if needed. Warm through and mash some pieces to thicken.
  5. Remove baby and toddler portions of soft aubergine, sweet potato and rice before adding peanut butter or adult seasoning.
  6. Serve rice topped with the vegetable mixture and yoghurt.
  7. Adults can stir through peanut butter and add black pepper, chilli or salt at the table.

Storage and reheating

Cool roasted sweet potato, tart and cooked rice within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat tart, aubergine and rice until steaming hot throughout and only reheat once. Greek bowls are best fresh; keep cucumber and yoghurt separate until serving where possible. Save plain roasted sweet potato for Dinner 3 before adding honey, salty feta or adult seasoning. For babies and toddlers, keep portions separate before adding salt, chilli, honey, peanut butter, whole pomegranate seeds, large amounts of feta or adult toppings.

Safety and substitutions

Use saved sweet potato only if it was cooled quickly and stored safely. Reheat until steaming hot throughout. Aubergine skin can be chewy, so cook until very soft and mash for babies. Peanuts are allergens and whole nuts are choking hazards — keep peanut butter for adults and older children only after baby portions are removed. Reheat rice only once.
