Ingredients
- 130g leftover grain-lentil base from Dinner 1
- 60g leftover grilled vegetables from Dinner 1
- 1 large pepper for stuffing
- 80g chopped tomato or passata
- ¼ garlic clove
- ½ tsp dried oregano or Italian herbs
- 5ml olive or rapeseed oil
- 20g mozzarella or cheddar, optional
- 10g breadcrumbs, optional
- 30g plain full-fat yoghurt, optional for serving
Method
- Heat the oven to 200°C / 180°C fan.
- Halve peppers lengthways and remove seeds. Place in a baking dish, cut side up.
- Warm the leftover grain-lentil base and grilled vegetables with chopped tomato or passata, garlic and Italian herbs. Add a splash of water if dry.
- Remove baby portions before adding cheese, breadcrumbs or adult seasoning. Mash or chop the filling as needed.
- Spoon the filling into the pepper halves.
- Add a modest amount of cheese and breadcrumbs to adult and older-child portions if using.
- Bake for 18–25 minutes until peppers are soft and the filling is hot.
- Let cool for a few minutes before serving.
Storage and reheating
Cool leftovers within 2 hours. Refrigerate cooked grain-lentil bases and cooked vegetables for up to 48 hours. Reheat leftovers until steaming hot throughout and only once. Keep watermelon, fresh cucumber and herb salad separate from cooked leftovers. Freeze plain cooked grain-lentil filling if not using within 48 hours. For babies, keep halloumi, olives, chilli, salty cheese and added salt out of their portions.
Safety and substitutions
Pepper skins can be chewy for babies, so serve only the soft filling. Keep baby portions free from halloumi, olives, salty cheese, chilli and added salt. Reheat leftover grain and veg until steaming hot throughout and only reheat once.
