Ingredients
- 75g pasta
- 80g plain yoghurt for this meal
- 25g extra yoghurt-herb sauce for Dinner 3
- 4g fresh tarragon, chopped
- 80g courgette, grated
- ¼ garlic clove, crushed
- ¼ lemon, juiced
- 1 tsp olive or rapeseed oil
Method
- Cook pasta according to packet instructions. Cook younger-child pasta slightly softer if needed.
- Heat oil in a pan and cook grated courgette with garlic for 4–5 minutes until very soft.
- Mix yoghurt, tarragon and lemon juice to make a sauce.
- Set aside the planned extra yoghurt-herb sauce for Dinner 3 before adding parmesan, pistachios or adult seasoning.
- Remove baby and toddler portions of soft courgette and pasta before adding salty cheese or adult toppings.
- Toss pasta and courgette with yoghurt sauce, loosening with pasta water if needed.
- Adults can add parmesan, crushed pistachios, black pepper or salt at the table.
- Refrigerate saved yoghurt-herb sauce for Dinner 3 within 2 hours.
Storage and reheating
Cool roasted aubergine, sweet potato and pasta within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat cooked components until steaming hot throughout and only reheat once. Save extra yoghurt-herb sauce from Dinner 1 for Dinner 3 before adding pistachios, parmesan or adult seasoning. Flatbreads are best served fresh. For babies and toddlers, keep portions separate before adding salt, chilli, whole nuts, pistachios, pomegranate seeds, large amounts of feta or parmesan, or adult toppings.
