Ingredients
- 110g leftover fajita bean mix
- 25g leftover cooked chicken, shredded
- 50g leftover cooked pasta
- 40g frozen peas, cooked
- ½ tomato, diced
- 3–4 tbsp plain yoghurt
- Optional: 1 extra wrap, cut into strips and toasted for adults/toddler
Method
- Reheat the bean mix and chicken together until steaming hot throughout.
- Stir in the cooked pasta and peas. Add a splash of water if dry.
- Remove babies portion and mash/chop to a safe texture.
- Stir yoghurt through the main pan or serve on top.
- Serve with diced tomatoes and optional toasted wrap strips.
Storage and reheating
Cool leftovers quickly and refrigerate within 2 hours. Use within 48 hours or freeze. Reheat cooked meat, beans and sauces until steaming hot throughout, and only reheat once. For babies, remove portions before adding salty cheese, ketchup, fajita seasoning, stock cubes or adult sauces. Squash beans and peas, finely shred chicken, break mince up well, and keep pasta/wrap textures soft and manageable.
