Ingredients
- 145g leftover Pasta alla Norma-style aubergine tomato sauce
- 195g leftover shawarma bean and veg traybake
- 1.5 wholemeal pittas
- 19g halloumi or cheddar, optional, for adults/toddler only
- 2g parsley or basil, chopped
- 2–3 tbsp plain yoghurt, optional, for serving
Method
- Heat the oven to 200°C / 180°C fan.
- Reheat the leftover aubergine tomato sauce and shawarma bean traybake until steaming hot. Stir well so there are no cold spots.
- Remove babies portion: mash beans and soft veg with aubergine tomato sauce. Add yoghurt if wanted.
- Split pittas or leave whole, depending on how thick you want the pizzas.
- Spread each pitta with aubergine tomato sauce. Spoon over some shawarma beans and veg.
- Add a small amount of halloumi or cheddar to adult and toddler portions if using.
- Bake for 8–10 minutes, until hot and lightly crisp.
- Scatter with parsley or basil. Adults can add chilli, capers or tapenade at the table.
Storage and reheating
Cool leftovers quickly and refrigerate within 2 hours. Use within 48 hours or freeze. Reheat leftovers only once until steaming hot throughout. For babies, remove portions before adding halloumi, capers, tapenade, chilli, salty cheese, stock cubes, ketchup or adult sauces. Squash beans, keep aubergine very soft, and cut spaghetti or pitta into safe textures.
Safety and substitutions
For babies, beans must be squashed and any aubergine skin should be very soft. Toasted pitta can be chewy or sharp, so the safest baby version is the soft leftover bowl. Reheat leftovers only once until steaming hot throughout.
