Ingredients

  • 1 flatbread, naan or pitta
  • 45g tomato pizza sauce or passata
  • 55g mozzarella
  • 80g cherry tomatoes, halved or quartered
  • 60g extra cherry tomatoes for Dinner 3
  • 4g fresh basil leaves
  • ¼ tsp Italian herbs or dried oregano
  • 1 tsp olive or rapeseed oil
  • ¼ garlic clove, optional

Method

  1. Heat oven to 200°C / 180°C fan.
  2. Put the extra Dinner 3 tomatoes on a small tray with a tiny drizzle of oil and a pinch of Italian herbs. Roast for 10–12 minutes until soft. Save these separately before adding salt, chilli flakes, balsamic glaze or extra cheese.
  3. Place flatbreads on baking trays.
  4. Spread each with tomato sauce or passata.
  5. Top with mozzarella and halved or quartered tomatoes.
  6. Sprinkle with Italian herbs.
  7. Bake for 8–10 minutes, until the base is crisp at the edges and the cheese has melted.
  8. Remove baby and toddler portions before adding balsamic glaze, chilli, salt or extra pepper.
  9. Scatter basil over adult and older-child portions.
  10. Slice and serve.

Storage and reheating

Cool cooked tomatoes, roasted butternut and bulgur within 2 hours. Refrigerate leftovers for up to 48 hours. Keep salad leaves, cucumber, basil and bread separate from wet dressings until serving where possible. Reheat roasted veg until steaming hot if serving warm. Do not reheat yoghurt-dressed salads; serve chilled or room temperature after safe refrigeration. Freeze roasted butternut or tomato sauce components only; assembled salads and flatbread pizzas are best fresh. For babies and toddlers, keep portions separate before adding salt, chilli flakes, balsamic glaze, hard croutons, raw onion, large amounts of mozzarella, adult dressings or strong black pepper.

Safety and substitutions

Whole or halved cherry tomatoes are choking hazards for young children; quarter them for children and cook or chop very soft for babies. Mozzarella and flatbread add salt, so keep baby portions modest. Avoid chilli flakes for children and babies. Keep balsamic glaze off baby portions. Cool the extra roasted tomatoes within 2 hours, refrigerate and use in Dinner 3 within 48 hours.
