Ingredients

  • 160g saved plain chicken and root veg from Dinner 1
  • 1 medium tortilla wrap
  • ½ tomato, diced
  • ¼ cucumber, diced
  • 45g plain yoghurt
  • ¼ red onion or cooked leek, optional
  • ¼ lime, juiced
  • ½ tsp mild paprika
  • ¼ tsp ground cumin
  • 5ml oil
  • 15g cheddar, optional

Method

  1. Heat oil in a pan. Add the saved chicken and root veg with paprika, cumin and a splash of water.
  2. Reheat until steaming hot throughout, breaking larger veg pieces up with a spoon.
  3. Remove baby and toddler portions before adding cheese, adult seasoning or chilli. Mash or chop as needed.
  4. Warm tortilla wraps and cut into strips. For adults and older children, you can toast some strips until lightly crisp.
  5. Mix yoghurt with lime juice.
  6. Serve warm chicken and root veg mixture in bowls with tomato, cucumber, yoghurt and tortilla strips.
  7. Adults can add chilli, hot sauce, black pepper or extra lime.

Storage and reheating

Cool cooked chicken and stew or curry components within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat until steaming hot throughout and only reheat cooked chicken once. Freeze plain cooked chicken and root veg or curry before adding yoghurt. Dumplings are best fresh; freeze stew without dumplings for better texture. For babies and toddlers, keep portions separate before adding salt, stuffing mix, suet dumplings, chilli, black pepper or salty cheese.

Safety and substitutions

Reheat leftover chicken until steaming hot throughout and only reheat once. Tortillas can be chewy for babies and young toddlers, and crisp tortilla strips can be hard, so serve baby portions as a soft bowl. Avoid hot sauce, chilli, added salt and salty cheese for babies.
