Ingredients
- 90g saved aubergine from Dinner 1
- 130g sweet potato, peeled and diced
- 100g chickpeas, drained and rinsed
- 50g salad leaves
- 15g spring onion, finely sliced
- 45g plain yoghurt
- ¼ lime, juiced
- ¼ tsp mild paprika
- ¼ tsp ground cumin
Method
- Heat oven to 200°C / 180°C fan.
- Roast sweet potato with paprika and cumin for 20–25 minutes until very soft.
- Warm saved aubergine from Dinner 1 in the oven for the final 5 minutes or in a pan until steaming hot throughout.
- Remove baby and toddler portions of soft sweet potato, squashed chickpeas and plain aubergine before adding feta, tortilla chips or adult seasoning.
- Toss salad leaves with spring onion, chickpeas, sweet potato and aubergine.
- Mix yoghurt with lime juice and spoon over the salad.
- Adults can add tortilla chips, feta, black pepper, chilli or salt at the table.
Storage and reheating
Cool roasted aubergine, pasta sauce and roasted sweet potato within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat cooked aubergine, pasta and sweet potato until steaming hot throughout and only reheat once. Save plain roasted aubergine for Dinner 3 before adding pomegranate molasses, honey, peanuts or adult seasoning. Taco salad is best assembled fresh. For babies and toddlers, keep portions separate before adding salt, chilli, harissa, whole nuts, tortilla chips, feta or adult toppings.
Safety and substitutions
Use saved aubergine only if it was cooled quickly and stored safely. Reheat until steaming hot throughout. Tortilla chips are choking hazards for young children — keep them for adults and older children only. Whole chickpeas should be squashed for babies. Salad leaves are not suitable for babies. Reheat saved aubergine only once.
