Ingredients
- 120g saved meatballs and tomato sauce from Dinner 1
- 100g saved roasted aubergine and tomato mix from Dinner 2
- 75g couscous
- 45g plain yoghurt
- ¼ lemon, juiced
- 3g fresh parsley, basil or oregano
- ¼ tsp ground cumin
- ¼ tsp mild paprika
- pinch of ground cinnamon
- 8g raisins, finely chopped, optional
- 8g ground almonds, optional
- 90ml boiling water or no-salt stock for couscous
Method
- Put couscous in a bowl. Pour over boiling water or no-salt stock, cover and leave for 5 minutes. Fluff with a fork.
- Reheat saved meatballs, tomato sauce and aubergine in a pan until steaming hot throughout. Add a splash of water if dry.
- Remove baby and toddler portions before adding adult chilli, salt or crunchy toppings. Mash or chop as needed.
- Stir cumin, paprika and a pinch of cinnamon into the adult and older-child sauce if you want a more Moroccan-style flavour.
- Mix yoghurt with lemon juice and herbs.
- Serve meatballs and aubergine sauce over couscous with yoghurt.
- Adults can add chilli, black pepper, extra lemon and toasted nuts at the table.
Storage and reheating
Cool cooked meatballs, tomato sauce and aubergine sauce within 2 hours. Refrigerate leftovers for up to 48 hours. Reheat meatballs and sauces until steaming hot throughout and only reheat once. Pasta is best fresh; sauces can be stored separately. Couscous is best cooked fresh. For babies and toddlers, keep portions separate before adding salt, chilli flakes, large amounts of pecorino/parmesan/ricotta salata, whole pine nuts, whole or chopped nuts, whole raisins, strong black pepper or adult toppings.
Safety and substitutions
Reheat saved meatballs and sauce until steaming hot throughout and only reheat once. Couscous contains wheat/gluten. Avoid whole nuts, pine nuts and whole raisins for young children. Keep baby portions free from added salt, chilli and salty cheese. Eat leftover reheated meatballs the same day.
