Ingredients
- 120g pork mince for this meal
- 80g extra pork mince for Dinner 3
- 75g dried basmati or jasmine rice
- 70g green beans for this meal
- 45g extra green beans for Dinner 3
- ¾ carrot, grated or finely diced
- ½ spring onion or shallot
- ½ garlic clove
- ½ tsp fresh ginger or ¼ tsp ground ginger
- 5ml rapeseed or sunflower oil
- 40ml water
- 5ml reduced-salt soy sauce, adults and older children only
- 10g ketjap manis or sweet soy sauce, adults and older children only
- ¼ lime, juiced
- 2g sesame seeds, optional
Method
- Cook the rice according to packet instructions. Keep baby rice soft and moist.
- Trim green beans and cut into small pieces. For babies, cook their portion until very soft.
- Heat oil in a large pan. Add pork mince and cook for 6–8 minutes, breaking it up well, until no pink remains.
- Add carrot, spring onion or shallot, garlic and ginger. Cook for 3–4 minutes.
- Add green beans and water. Cover for 4–5 minutes until the beans are tender.
- Remove and save the planned extra pork and green beans for Dinner 3. Cool quickly and refrigerate.
- Remove baby and toddler portions for tonight's meal before adding adult sauces.
- Stir soy sauce and ketjap manis into the adult and older-child pan. Bubble for 1–2 minutes until glossy.
- Serve over rice with lime juice. Adults can add chilli and sesame at the table.
Storage and reheating
Cool cooked pork and green beans within 2 hours. Refrigerate cooked pork for up to 48 hours. Reheat pork until steaming hot throughout and only reheat once. Cool rice quickly, refrigerate promptly and reheat until steaming hot. Noodle dishes are best fresh. Keep cucumber, lettuce, spring onion and herbs separate from hot leftovers until serving. For babies and toddlers, keep portions separate before adding salt, soy sauce, ketjap manis, sweet chilli, chilli, sesame, honey or adult stir-fry sauces.
Safety and substitutions
Pork mince must be cooked until no pink remains. Soy sauce and ketjap manis are salty and sugary, so keep baby and toddler portions separate. Green beans should be soft and chopped for younger children. Cool saved pork and green beans within 2 hours and use within 48 hours.
