Ingredients
- 125g saved plain pork and green beans from Dinner 1
- 60g rice noodles
- 3–4 lettuce leaves
- ¼ cucumber, finely diced
- ¾ carrot, grated
- ¼ spring onion
- ¼–½ lime, juiced
- 30g plain full-fat yoghurt, optional cooling dip
- 5ml rice vinegar, optional
- 5ml reduced-salt soy sauce, adults and older children only
- 5–10g ketjap manis or sweet chilli sauce, adults only, optional
- 2g sesame seeds, optional
Method
- Cook rice noodles according to packet instructions. Drain and rinse briefly. Cut shorter for toddlers and babies.
- Reheat the saved pork and green beans until steaming hot throughout. Add a splash of water to keep moist.
- Remove baby and toddler portions before adding adult sauces. Finely chop pork and beans as needed.
- Mix cucumber, carrot, spring onion, lime juice and optional rice vinegar for a fresh topping. Keep raw spring onion out of baby portions.
- For adults and older children, mix soy sauce and optional ketjap manis or sweet chilli with lime to make a quick dressing.
- Spoon noodles, pork, green beans and crunchy veg into lettuce leaves.
- Serve with yoghurt as a cooling dip if wanted.
- For babies and toddlers, serve as a soft bowl with noodles, pork, green beans and a little yoghurt or lime, not as lettuce cups.
Storage and reheating
Cool cooked pork and green beans within 2 hours. Refrigerate cooked pork for up to 48 hours. Reheat pork until steaming hot throughout and only reheat once. Cool rice quickly, refrigerate promptly and reheat until steaming hot. Noodle dishes are best fresh. Keep cucumber, lettuce, spring onion and herbs separate from hot leftovers until serving. For babies and toddlers, keep portions separate before adding salt, soy sauce, ketjap manis, sweet chilli, chilli, sesame, honey or adult stir-fry sauces.
Safety and substitutions
Reheat leftover pork until steaming hot throughout and only reheat once. Lettuce cups are not suitable for babies and can be awkward for toddlers, so use bowls for younger children. Rice noodles should be cut short. Keep soy sauce, sweet chilli sauce, sesame and chilli away from baby portions.
