Ingredients

  • 1¾ potatoes, halved if large
  • 1½ eggs
  • ½ x 160g tin green lentils, drained and rinsed
  • 60g frozen peas
  • 1 carrot, grated for adults/toddler; steamed or cooked soft for baby
  • ¼ cucumber, diced for adults/toddler
  • 4 cherry tomatoes, quartered, or 1–2 medium tomatoes diced
  • 90–120g salad leaves, for adults/toddler
  • 1 tbsp olive or rapeseed oil
  • Juice of ½ lemon
  • 1 tsp dried mixed herbs or oregano

Method

  1. Boil the potatoes for 12–15 minutes until tender. Drain and let them steam dry.
  2. Boil the eggs for 9–10 minutes until fully hard-boiled. Cool, peel and chop.
  3. Cook the peas in boiling water for 3–4 minutes. Drain.
  4. Warm the lentils gently in a pan with a splash of water, herbs and lemon juice.
  5. For babies, remove a portion of potato, lentils and peas. Mash or squash well. Add a little chopped hard-boiled egg only if egg is already tolerated.
  6. For adults and the child aged 2–4 years, toss potatoes, lentils, peas, carrot, cucumber, tomatoes and salad leaves with oil and lemon juice.
  7. Top with chopped egg. Adults can add black pepper, chilli, extra lemon and salt at the table.

Storage and reheating

Cool leftover chicken and roasted veg quickly, refrigerate within 2 hours, and use within 48 hours. Reheat chicken only once until steaming hot throughout. For babies and toddler, watch round or firm foods: peas, beans, lentils, cherry tomatoes, cucumber, raw carrot and chunks of meat all need modifying. Squash, quarter, grate, cook soft, finely chop or shred depending on the food and your child's eating skills. For babies aged 7–9 months, keep salt out of the shared cooking, avoid honey, and modify raw salad foods into soft, mashed or finely chopped versions.

Safety and substitutions

This is a salad for adults and the toddler, but babies version should be more like a soft warm mash/bowl, not a raw salad. Peas and lentils should be squashed for babies. Cherry tomatoes should be quartered for the toddler and chopped very small or softened for babies. Egg is a common allergen, so introduce it safely and seek professional advice first if there has been eczema, known allergy or a previous reaction.
